Hey Ankur — yes, the rooftop at Adriana Hvar Spa Hotel is open at sunset, and it's one of the best perks of staying there. The rooftop bar and pool deck face west over Hvar harbor, so you get unobstructed views as the sun drops behind the Pakleni Islands. Service runs until around 11pm in summer, so you can linger through the golden hour and into evening. Worth noting: the rooftop can get busy with outside guests between 6–8pm (it's a popular sunset spot for non-hotel visitors), so if you want a prime lounger or corner table, either grab it mid-afternoon or ask the concierge to reserve a spot when we check in. The cocktails are solid but pricey (~€15–18); I'd vote for one round up there on Day 8 after we arrive from Split, then maybe hit a konoba in town for dinner so we're not doing hotel food both nights.
